RAW Coffee Company has opened PROOF Bakery, a new concept operating within RAW Café that extends the brand’s food offering beyond its specialty coffee roots.
The bakery launched in September and was developed entirely by RAW’s in-house food and beverage team. All products are made from scratch on site, with an open-window design giving café guests a view of the baking process.
The initial range covers sourdough and white loaves, brioche buns, plain and olive ciabatta, simit, baguettes, butter, almond and chocolate croissants, cinnamon buns and a selection of danishes. Regionally inspired products are planned as the range develops.
“The launch of PROOF marks an important step in RAW’s evolution as a business. While specialty coffee remains at the heart of what we do, we are increasingly looking at opportunities to expand into complementary verticals that build on our expertise and respond to evolving customer needs. PROOF allows us to build on the capabilities we already have within the business while creating a new avenue for growth. We see the potential for it to develop beyond our own cafés and serve a wider B2B market over time,” Matt Toogood, CEO of RAW Coffee Company said in a statement.
Alongside the bakery launch, RAW has redesigned the mezzanine level of RAW Café into a more work-focused space, aimed at guests looking to work or take meetings in the café.
